Renowned Chef Zie Zie captivated us by demonstrating how to prepare baked US potatoes with cheese.

Recipe baked US potatoes with cheese
Main ingredients
  • US russet potato - 6 pieces medium size
  • button mushroom - 100 gram
  • diced onion - 20 gram
  • minced garlic - 5 gram
  • red capsicum cubes - 10 gram
  • broccoli - 30 gram

Seasoning and herbs
  • fresh thyme - 2 stalks
  • Moroccan spice - 1/2 teaspoon
  • salt - 1/4 teaspoon
  • pepper - 1/4 teaspoon

Garnish 
  • chervil leaves - as needed

Steps
  1. Prepare the baked russet potato, pierce some holes on the potatoes with a paring knife then wrap the potato in aluminum foil without oil and bake for 58 minutes at 165 Celsius.
  2. When is done, hold the potato with a hot towel and cut it in half, scrape out the potato filling with a metal spoon, and set aside.
  3. In a pan, heat up some oil and char the broccoli for a few minutes. After that flip the broccoli over and add 2-3 tablespoons of water to steam cook and to add some moisture. After that remove the broccoli from the pan and set aside.
  4. In the same pan, add some oil followed by diced onion, minced garlic, and capsicum. When the aromatics start to be fragrant, add in the charred broccoli then season with some Moroccan spice, salt, and pepper. Set aside when is done.
  5. On the other hand, mash the potato with a masher, add in milk and finely chopped parsley. Fold in the potato gently then season with salt and pepper to taste.
  6. Now combine the sauteed and charred vegetables into the mashed potato. Adjust the taste by adding more salt and pepper when necessary.
  7. Scoop the filling into the potato skin then top it off with some shredded cheddar cheese and melt in an oven or an air fryer for 2-3 minutes at 175 celcius.
  8. Lastly, garnish with some chervil leaves and ready to be served.

Recipe Twinkle US potatoes stars
Main ingredients
  • US russet potato - 2 pieces
  • melted butter -20 gram
  • egg yolk - 1 piece slightly beaten
  • cream - 35 gram

Seasoning
  • salt - 1/3 teaspoon
  • pepper - 1/4 teaspoon
  • nutmeg powder - 1/4 teaspoon

Egg wash
  • egg - 1 whole
  • water - 1 teaspoon

Garnish
  • English parsley - as needed

Steps
  1. Wash and peel the potato, cut into uniformed chunk sizes then put in cold water and boil the potatoes until soft approximately 18-20 minutes.
  2. When is done, remove the potatoes, drain, and mash the potatoes with a masher. Immediately fold in butter cubes and seasoning when is steaming hot.
  3. Followed by cream. When the mixture has slightly cooled down, fold in the lightly beaten egg yolk.
  4. Fill the piping bag with the mashed potato mixture with a swirl shape nozzle, and pipe into the desired shape and size. Make sure the size is uniform for even cooking.
  5. Then brush the pipped potato with egg wash mixture and bake in the oven or in an air fryer for 10 minutes at 175 Celcius.
  6. Lastly, garnish with some chopped English parsley and ready to be served.



The fun continued with Chef Taufiq leading a potato carving workshop, teaching and challenging us to carve two festive figurines from US russet and purple potatoes.

I always wanted to have a beautiful hair, yes you know what I mean.
